Hello Beth;

Re: Digest Number 37

Yes, most call the escarpment here " mountain " .

Some of us call it the excarpment and the city workers also, because, of the

Niagara Escarpment.

As for a spicy , vegetarian burger.

I have been experimenting alot with all sorts of spices and herbs while cooking.

I still haven't found the right combination of spices to make things spicy.

I know there is chili powder , sauces , etc...... that are spicy.

But, for some reason, when I add chili powder combined with other spices and or

herbs, it just doesn't turn out the way I expect it or would like it to turn

out.

Wonder if I read up on Cajun spice mixes recipes, if I might be able to find

that.

Homemade dry mixes, where I would be able to incorporate it to the things that I

wish to make.

Hope your day is going well.

Thanks again for helping me out.

With Love

GOD BLESS !!!

I had a brain fart!!!! Silly me...the answer is so obvious...I've been using

canned chipotles a lot lately - whizz some up in a food processor or blender &

add to your veggie burger!!!!!! SPICY, smoked jalapenos. I find the chipotles

in the Mexican section of my regular supermarket, not far from Old El Paso

stuff. This would also add moisture & texture which you wouldn't get from dry

spices. There are several kinds of pepper sauces out there to try. You could

always get loads of varieties of dried peppers, soak them in boiling water, peel

& deseed them, whizz them up to add to your burgers. Would Jaimaican Jerk

seasoning work? That's also available in a jar in the Int'l foods section.

Recipes for Cajun spice mixes are available online...just google it.

My friend in Hamilton is wondering what part of town YOU are in!

I'm having an ok day...my 4 yr. old just finished swimming lessons for the

season & is doing wonderfully. BUT, I cannot find the sprinkler anywhere. :(

*sigh* Such is the life of mommy, eh? ;)

Let me know if these pepper ideas work for you, ok? Have a good one.... Bethie
