BEAN BURGERS #2

Yield: 8 servings

 

 

4 whole wheat bread slices

16 oz vegetarian refried beans, canned

1 cup millet or brown rice; cooked

1/4 cup oats; quick-cooking

1/4 cup tomato paste

1/2 tsp garlic powder

1/2 tsp salt

1 tbs arrowroot

3 tsp onion, finely minced

 

 

Process bread, one slice at a time, in a dry blender

to form soft crumbs. Mix all ingredients together

well. Form into 8 patties. Brown on each side in a

vegetable-oil sprayed non-stick skillet. Serve as is

or on whole wheat buns with lettuce, sprouts and

ketchup, if desired. Per patty: 131 calories, 6

protein, 25 g carb, 6 g fat (4%)
