What I've come up with for enchilada sauce is to do the following

Boil 1 C water

Add your preferred peppers and amount for heat.

Let sit 1 hour.

Puree in blender. Place in saucepan, add 2 tbsp tomato sauce to thicken.

Recipe Request - Spicy Enchilada Sauce

Does anyone have a T & T recipe for a good spicy enchilada sauce? I made

enchiladas last nite with refried beans, roasted corn, fresh salsa, and

a variety of cheeses, but the sauce was rather blah, even thought it was

labeled " hot " . I'd really like to be able to make my own sauce, so that

I can have as much (or as little) heat as I want.

Hi Sherri, I have the best recipe for New Mexico red chile enchilada sauce. It's

very fast and

easy to make. Once you taste it, you won't want to eat canned sauce ever again!

Now after that teaser, I'm gonna have to post the recipe later tonight or maybe

tomorrow. I

need to get out of here and head to my dad's house for a father's day

celebration.

Happy father's day to all the dads out there in veggie land!
