RECIPE: Cauliflower w/ Chilies & Ginger (Vegan)

CAULIFLOWER WITH CHILIES AND GINGER (VEGAN)

 

This is a favourite here ;=) The degree of `heat' is up to you - the ginger

alone

might do it for some; others will want those red-hot chillies!

 

1 or 2 Tbsp cooking oil

1 small head of cauliflower, cut into florets

4 or 5 rounds of ginger root, cut into thin strips

2 or 3 chopped green chilies (optional but good)

2 or 3 garlic cloves, crushed and chopped

2 handfuls of cilantro/coriander leaves, chopped

juice of 1 small lime

salt and pepper to taste

 

Saute the ginger, garlic and chilies in the oil for a few seconds over medium

heat, being careful not to burn the garlic. Add the cauliflower florets (and

salt if

used), raise the heat to medium-high and stir for a couple of minutes to coat

the cauliflower in the spiced oil. Then add around 1/3 cup of water and cover *

immediately* to let the cauliflower steam for about three minutes - it should be

*just* cooked through, not soft. Remove lid and let any extra water evaporate,

then stir in most of the cilantro/coriander leaves (saving a little for garnish)

and lime juice and salt and pepper to taste.

 

Good with almost anything savoury and spicy ;=)

Thanks for the plug, Beth. That was one of the earliest recipes I (under a

different ID) posted on this group and I love it, but I haven't made it in ages.

Looking at it again, I went out this afternoon for a cauliflower and am making

it for our main meal tomorrow!

I cooked up 2 BIG heads of cauliflower & the 4 of us devoured it!  (there was

other food, too, but I'm very happy that my wee ones are big veggie eaters. 

we LOVE this recipe!)

Nice thing about cauliflower is that not only does it taste wonderful, have

great texture, look great in whatever recipe one uses for it, but it is also

nearly guilt-free eating, healthy because it's a crucifer, and almost entirely

without waste. And oh yeah, it's good raw or cooked!

I cooked up 2 BIG heads of cauliflower & the 4 of us devoured it! (there was

other food, too, but I'm very happy that my wee ones are big veggie eaters. we

Also, if you can't afford to buy organic or the option isn't

available where you live, it's one of the veggies that has the least

pesticides on it.

I plan to put a list of high pesticide load produce and lower

pesticide load produce on my Stubblejumpers website, when I get two

spare minutes to rub together.
