On the Menu?

Well, what is/was on the menu for today? Saturday is generally either a very

lazy day or a very busy one - rarely anything in between! So what was on the

menu for you today? Something spicy? Something trad? Something quick

and easy?

 

If I was to answer my own question, and you know I love to do that *lol*, I'd

say

that I opted for quick and easy and spicy: Tofu Pad Thai. For tomorrow I

dunno - possibly a white curry . . . gotta think it out a bit ;=) We might even

go

out to grab a bite somewhere . . .

 

And you?????

Here is a great recipe that is sure to delight you and anyone who tries it.

It's a big hit around here!!

2 C. cooked kidney beans, mashed

 

2 C. cook pinto beans, mashed

 

1 lg. finely grated carrot

 

1 stalk finely chopped celery

 

1 med. onion, finely chopped

 

1 garlic clove, minced

 

2 chopped green chili peppers

 

1 tsp. cumin

 

1/4 tsp. kelp

 

1 tsp. chili powder

 

1/8 tsp. thyme

 

1 tsp. vegetable seasoning

 

dash of cayenne pepper

 

TOMATO JUICE

 

 

 

Place all of the ingredients in a large skillet and simmer gently for 20

minutes. Stir frequently and add enough tomato juice to keep the mixture

from sticking. When it is finished cooking it should have a pasty

consistency. While the beans are cooking, place the tortillas in a skillet

with a small amount of oil. Cook until tortillas become soft and pliable.

Place cooked b bean mixture in the center of each tortilla and add the

condiments of your choice. Roll the tortillas up snugly and serve with a

bowl of salsa sauce.

 

When you are cooking this very good mixture, you may want to keep a bag of

nacho-type chips, just for tasting of course. Actually, the tortillas wraps

could be microwaved. Also, you may want to add cheese, tomatoes, onion,

lettuce to you burrito. Use your tasty imagination.

This sounds like it would be a big hit around here, too ;=) Have you named it?

If so, please let me know and if not then *do* so and I'll put it up in the

Files.

Otherwise it's gonna be Chuckfry's Fry-Up, which is just a bit too cute *lol*

Looks fab but can I replace the kelp w/something else or just leave it out? I'd

have to hunt down that ingredient & it really doesn't do it for me regardless

how healthy. Did I manage to get that out w/out offending anyone? Beth

I should have inferred it from the rest of the recipe

instructions in any case ;=) As for my pathetic

attempt at wit, best forgotten :=( Okay, I'll stick it

Please don't take offense but Memorial Weekend we go to my brothers for our

annual ribs'n'ritas weekend. This year my sister & her family joined us. You

all would be revolted. Hell, we were revolted but it was yummy & good. Feel

free to be disgusted but you asked. ;)

To balance it all, I'm sifting through World Vegetarian right now for menu

ideas!! Beth
