I made a version of the soup (all natural and organic ingredients) yesterday and it was/IS just what I needed. I also made a vegetarian shitake mushroom barley soup today. It's nice to have LOTS of soup in the house to eat and eat and eat. I am not following the diet as outlined. My idea this week is to eat the soup all day and a dinner of fresh fish (I normally bake with herbs, garlic, and lemon) and veggies (salad and steamed broccoli, cauliflower, kale, etc) with a little olive oil, lemon, and garlic. I really overate last week while traveling and eating at other people's homes and parties/ banquets. It's good to be home and good to eat a healthy warm veggie soup to my heart's delight. The boxed Imagine brand veggie broths are nice in this soup btw as a base. Guest guest
That's funny...I am just looking at the recipe and it sounds soooo good! Just what I need right now. Or maybe my father's version of borshcht....broth with beets, cabbage, potatoes, onions, green peppers and tomatoes. Perfect for this dismal rainy weather.
