Take three pounds of cranberries, wash, sort, and simmer with very little water until they pop. Strain through a sieve or colander to remove skins. Add sugar to taste...remember it will taste less sweet when frozen. It should be a little on the tart and refreshing side. Put in loaf pans in the freezer. Stir and scrape up every 20 minutes or so until hard. Serve in pretty cut glass cups if available. Serve with the main course.
