As Marcia and Elizabeth said .. that's normal. But its not gelling ..

or congealing .. its crystallizing. When it gets warmer it returns to

its former consistency without damage to the chemical profile or odor.

 

UNADULTERATED, Hydrodistilled Rose Otto (Rosa damascena) will always

form colorless crystals of the solid hydrocarbon called stearopten at

temperatures of 21 degrees Celsius or so .. that's around 69.8 degrees

Fahrenheit. Certain conditions .. like barometric pressure, etc., can

change that plus or minus a degree.

 

What you are seeing are feathery, shiny crystals of Rose stearopten.

 

Some other tests for purity (besides GC or GC/MS) are not so commonly

used but they are scientifically sound. Pure Rose Otto will congeal in

5 minutes at around 54.5 F. and will solidify at around 51.8 F.

 

ADULTERATED Rose Otto will not crystallize easily because the most

common adulterant is Phenyl ethyl alcohol (PET). If y'all wanna test

your Rose Otto for adulteration then put it in your refrigerator for 5

minutes or so. If it doesn't crystallize .. its probably adulterated

with PET.

 

Same goes for Anise. .. it crystallizes at around 59-60 degrees F.
