Pumpkin Bread 3 1/2 c flour 1 1/2 tsp salt 1 Tbsp Cinnamon 1 Tbsp pumpkin pie spices 2 tsp baking soda 4 eggs 3 cups sugar 1 cup vegetable oil 2/3 c water 1 15 oz can pumpkin Mix eggs, pumpkin, sugar, oil, water and spices. Slowly beat in flour and baking soda. Nuts are optional. Pour into 2 greased & floured loaf pans and bake at 350 for an hour (possibly longer depending on your oven and what type of bread pans you use. ************************************************** Pumpkin Butter 2 cans apple juice, undiluted (frozen) 3 small cans pumpkin (15 oz) 3 - 4 large jars applesauce 2 cups brown sugar 2-3 T pumpkin pie spices Simmer for 3 to 4 hours and put into canning jars. ****************************************************************** I was in the mood for some banana bread, but every time I fixed it, it came out dry and hard to swallow I simply used my pumpkin bread recipe, altering a few things: Weigh out the 15 ounces of smashed bananas, leave out all of the spices and add 2 Tbsp of vanilla extract, and cut back some on the salt.
