I wonder if it could be the stage of growth it was picked at?? I wanted mine for tub teas. I have some mint and chocolate mint to harvest yet so want to make sure I dont make the same mistake. It turned purplish brown color. I just used it anyway because I had dried it for making tea and I knew there was nothing wrong with it. It all looks the same in the stomach. My guess is that it's oxidation. I am not sure how to prevent it because I haven't experimented enough to see.
