I'm not sure what happened with your mint. I would suggest that you store

your herbs in glass jars with a good tight seal to keep in freshness. All my

instructors have always stressed the glass jars and some even use amber to

help more. Just a thought.

 

Does the peppermint still smell strong?

Are you sure it was TOTALLY dry when you bagged it? Maybe it browned because it

wasn't totally dry yet.

I dry mint in the dehydrator (works quick) and store it in glass jars. Looks

great and really holds it scent.

Don't know Tracy. I dried peppermint and it's still green 2 months

later. What kind of mint was it?

I've had my peppermint go brown before--a couple of times. It turned

purplish brown color.

I just used it anyway because I had dried it for making tea and I knew there

was nothing wrong with it. It all looks the same in the stomach.

 

My guess is that it's oxidation.

I am not sure how to prevent it because I haven't experimented enough to

see. I would guess a glass jar helps but that's where my peppermint turned

brown-- in a glass jar at the back of my herbal cabinet.

It was a nice dark green with purple undertones when it was first dried;

after a few months I discovered the change to brown.

How long before you noticed yours had turned brown?

 

I suspect, with my own experience, that it was something I did or didn't do

in the drying process. I think the weather at the time may have played a

role, i.e., humidity, but I didn't pay enough attention to be able to say for

sure.

 

Since I am going to be harvesting other plants this week,(Solidago is one of

the main ones thanks for the write up EZ) I will play around with different

techniques for drying peppermint and see what the results are. I always love

a mystery!

I place my herbs in a large brown bag but leave it open for them to dry.

I also place them on a flat cookie sheet. Once completely dry I put

them in zip lock bags. I've never had my peppermint go brown on me yet.

I dry mint all the time and I pick a small bunch, place in brown paper lunch

bag, staple closed and write date on it. About a month or more later its

ready to use and put into a glass jar in dark cupboard. Sometimes I keep it

for months in the brown bag before I remember to transfer it and it is fine
