In my opinion, (and I am not an expert) second choice would be champain yeast bear yeast might be next choice. bread yeast would be my last choice. Wish that I had some MEAD right now. It'll be a while till I can get with them though... Have you tried searching the web for the recipes... I know that honey is one of the main ingredients...
