Need a recipe without the sugar. Has anyone made Vanilla extract~without sugar~in a alcohol base? What I have is straight with vodka, no sugar and smells stronger than normal. Used about a lb of beans to a quart+ or so of vodka. Have 5 lbs coming and want to make a good strong one that I can play with for a recipe that we will market that has a partial Vanilla base. Will probably add glycerin later for market product, so definitely don't need the sugar added. Plus I'm diabetic and can't use it with sugar in it for the household use. What is known commercially as single fold vanilla extract is about 3/4 of a lb of beans (12 oz) per gallon of an alcohol that is around 70 proof or so. 2X is double the amount of beans per gallon of alcohol ...
