Guest guest Posted May 26, 2005 Report Share Posted May 26, 2005 A recipe from the wonderful restaurant The Fort, in Colorado (Butch can tell you how much he loved the Prairie Butter when we ate there *Smile* Chris (list mom) http://www.alittleolfactory.com ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Damiana Vinaigrette The Fort - Morrison, Colorado * 1 cup red wine vinegar * 2 tablespoons water * 1 ½ teaspoons damiana * 3 cups salad oil * 1 ½ tablespoons sugar * 1/8 teaspoon salt * 1/8 teaspoon white pepper Heat the vinegar and water in a non-reactive pot to almost boiling, about 190° F. Add the damiana and mix well. Place in a sealed glass or plastic container and set aside at room temperature for 2 weeks. Pout through a strainer to remove the leaf. Add the oil, sugar, salt, and pepper. Taste and adjust to personal taste. Note: Unstrained Damiana vinegar in a decorative bottle makes a wonderful gift.
