Recipe: Goatsmilk Vanilla Bean Ice Cream

I made some yummy " French Vanilla " style ice cream, and I figured I'd

share the recipe -

 

My 5 yr old son helped me make this ...

 

Here is what we did folks:

 

Ingredients:

6 farm fresh eggs

1 & 1/2 Cup local raw Goat's Milk

1 & 1/2 Cup local raw Cow's Milk

1 Cup local raw Heavy Cream (skimmed from the local raw cow milk - NOT

the milk used in the ice cream ;)

1 & 1/2 Cup unrefined golden cane sugar (I feel that this amount could

easily be reduced)

1 Madagascar Vanilla Bean (from the vanilla co-op we did a couple

months ago ;) - split and scraped

 

Instructions:

We blended together the eggs and sugar. In a separate pan we heated the

milk and cream until scalding hot (but not boiling). The I added about a

1/2 cup of the milk to the eggs and whisked (this is to temper the eggs,

so they don't just turn into scrambled eggs in the hot milk ;). I did

this two more times and then added all the remaining milk/cream to the

egg mixture. Then I put the vanilla beans seeds into the mix, and then

the whole rest of the bean pod. I let this cook on low heat, stirring

regularly, until the mixture began to thicken (once it sticks to the

back of the spoon its ready). At that point I strained it and put it

into a bowl to cool for several hours. Once fully chilled, we placed it

into our frozen ice cream maker bowl and let it do its thing in the ice

cream maker for about 30 minutes. After that it was ready to eat.
