But, if you think I'll be able to stick my Great Dane in a box, I'll send her over to help you out. Or, I can send one of the goats as they've pretty much eaten all the cleavers in their area!!! Now, if I can only get them to somehow like Nettle!! Figure there had to be nettle seeds in the last hay bale we got. There is nettle bushes literally everywhere!!! Anyone need any of that!! I have a boatload!! Guest guest Posted April 30, 2005 Report Share Posted April 30, 2005 Nettle is a great wild edible and is loaded with vitamins and minerals. If you like eating boiled greens, you might try nettles. I particularly like creamed nettle soup with wild leeks. The formic acid is neutralized upon heating or drying. You only have to be careful when you are picking and preparing them. It also makes a wonderful medicinal herb for anyone with skin problems such as eczema. Try a nettle infused oil for making shampoo or hair and scalp treatment......nettle is wonderful! They are far more tender than later in the year but you can harvest the tops any time up until flowering. What I usually do is saute an onion (or if you are lucky enough to have them, wild leeks) in a good amount of olive oil (might want to add a little butter too) until it is soft and translucent. Once you get to that stage, add a little flour to make a roux. Keep stirring until it turns tan and then add milk or cream (about three cups) and a little bit(1 cup) of chicken or vegetable broth. Bring this to a simmer and then stir in your fresh, chopped nettle greens (no stems). Cook until the nettles become soft--it wont take very long. Salt to taste. Eat and enjoy! I have actually tried to PLANT nettles! They don't like it here for some reason.
