I have some local raw goat milk Kefir-Leban cheese that I am making and I have a container full of whey now and I am wondering what I can do with it. http://tinyurl.com/4ftde Maybe make soap with it? Maybe some lacto-fermented pickled beets with it ....? Sally Fallon's book " Nourishing Traditions " has recipes that use it as a starter for fermented vegs and as a base for drinks. She uses equal parts of water and whey with lemon juice. A tablespoon of whey is good for the joints. Use whey instead of water in any baked goods. Get the book, it is so excellent. If I could have only one food book, this would be it.
