Thanks, Debbie Hi Debbie, The vanilla sugar couldn't be easier... choose a favorite sugar (Chris has some excellent ones!) regular ol' white, muscavado, organic..... Bury one vanilla bean in about 6 cups of the sugar --seal in a jar. Let sit (maybe shake the jar every so often) for a good long time to let the vanilla oils/aroma infuse into sugar. I would say 2 weeks will do it good, but longer is better. Then repackage into nice jars (hmmm... doesn't Chris also have those wonderful plastic bail jars for sale too? or was that a co-op?) You can do as many vanilla beans as you want in as many cups of sugar as you want. Just do it to your desired strength. I made a lovely vanilla bean/Everclear infusion. I make lovely natural perfumes with it. It is so strong that I don't know how I will ever use it up (lots of people are gonna get perfumes and sprays (room sprays or cologne sprays). It seems I have a young 'un sick here... at least he made it to the bathroom by himself and reported to me afterward. Gotta go! Guest guest Posted February 16, 2005 Report Share Posted February 16, 2005 Vanilla sugar is what we use in Europe, instead of liquid vanilla in cooking. A pint jar full of sugar and half of a vanilla bean will make fine vanilla bean sugar. The bean can be used several times over with new sugar. Guest guest Posted February 16, 2005 Report Share Posted February 16, 2005 I've been making my own Vanilla Extract for years...buy a pint of the cheapest vodka you can find at the liquor store. Take 2-3 vanilla beans, slit them open lengthwise, and drop in the bottle. Set the bottle in a dark place (kitchen cabinet), try to remember to take it out and give it a good shake a couple of times a week. It's ready to use in about a month, and gets better as it ages! A > vodka or something? > Everclear is the highest proof alcohol you can get (well... in some states you cannot get it, but here in Illinois you can). It is actually the name of the alcohol that you will see on the bottle. For extracting oils from different plant materials, it is best to use the highest proof alcohol you can. But, not necessarily if you intend to drink it! LOL Vodka is the next highest proof. I did use some of my vanilla *tincture* (realized I said infusion yesterday. Infusion is soaking the plant materials in an oil; tincture is in alcohol) in some baking I did. You must remember that using an vanilla/alcohol tincture is not necessarily the same as vanilla extract. The tincture does not have any sugar in it whereas a vanilla extract has plenty of it. This can affect the taste of some products you choose to use it with. I was making a sweet potatoe souffle and it was lovely in it, but the coffee that I decided to put a drop in, was pretty bitter. I also made homemade waffles and used a bit in it --it definitely would have benefitted from the addition of sugar though! I'm certain you can find instructions to make actually vanilla extract, if you want to, on the web. At home with the sick kids today. They are not bad though.
