Wash with salt water to get all the buggies off of them. Cover with water and boil up to 25 minutes. Drain, cover with water a second time and boil again. Drain well and put into a skillet with some of that lovely ole grease and cook the third time. Scramble several eggs into the mixture and you have Poke Salat. Poke Salat is not true without a nice sprinkling of your choice of vinegar on top. Ole timers called it their Spring Tonic. It will clean you out, for shure! Tastes wonderful too. Goes well with bean soup, and corn bread, with onions on the side. Poke root is supposed to be good for mastitis, breast lumps, etc. Use as a poultice. It's written up in several of my herbal books. Do not eat. Berries are used as a natural dye. Birds do eat them, but it is never recommended that folks eat the berries. Enjoy your Spring Tonic!
