Herb Of The Week - Pokeweed

Hi Ien,

 

Tender young pokeweed leaves have been eaten in early spring for

centuries. Some folks say it is one of the most delicious leafy veggies

out there.

 

I used to have a friend who was from Kiev and her mother would tell me

all about going foraging for wild mushrooms (obviously she knew which

ones were edible) and how with certain varieties one would need to

change the water several times during the cooking process. She said it

was every bit worth the effort for those delicious mushrooms.

 

Same kind of thing I suppose.

Why eat something that needs several boilings and rinsings to be edible?

People used to do the same with skunk cabbage.

I never could see the point, when there is so much wild

greenery that is good as is.
