They are one of those veggies I have little to no experience with.<<< This is one of the few veggies (along with brussel sprouts and spinach!) that I have icky memories of from childhood. My dad used to grow mustard greens in his garden and MADE us eat them. (we were required to finish our vegetables before we could be excused). I'm sure there's some smanshy-panshy way of preparing them to make them TASTE good, but my recollections are awful! Bitter, bitter, bitter! Nothing but bitterness. My mom probably just steamed them, I don't even think she put salt or pepper or butter on our stuff back then. But they were truly awful. I see them in the store now, big beautiful fluffy, curly edge greens, they look so " healthy " , but my stomach just groans at even the sight of them. I've made spinach palatable by chopping it fine and adding to things like casseroles and ciech (?) how do you spell that? That egg pie thing. Also in dips and cheese sauces. That's the ONLY thing I can think of for mustard greens. Cook them well, chop fine, and " hide " them in things and maybe your kids won't notice!
