(Colcannon) Add freshly ground black pepper and butter and a finely chopped raw shallot. If you eat bacon, a bit of crumbled bacon bits does miracles for this dish, but only if you have access to home-grown pork. The large-scale commercial piggeries are evil. Cruel to animals and destructive of land and people around them. Apart from the health aspects. Sometimes I wish I didn't know that. The gorcery store has this incredibly nice, lean, cheap pork...
