4 great Thanksgiving desserts! and more

Hi all,

I decided to rethink the stevia (since I have found that others can

taste it/don't like...). I would rather cut out refined flours and

use/eat a little sugar or honey. I think all of these desserts will

be great through the holidays --but there won't be any getting away

from flour during the Christmas season! Can't stop some traditions!

Having cut out all dairy, flour and sugar from my diet is going to go

out the window somewhat during the holidays for me, but that will be

okay for just the holidays. Sometimes I am satisfied enough in making

something good for others that I don't even have to eat any myself!

I still wanted something crustless and with as little sugar as

possible for Thanksgiving though.

Well... I think I have found 4 great ones. All recipes call for very

little sugar and I am going to reduce that just a smidge still and use

raw organic sugars and other organic ingredients.

I am just going to list each link to the actual recipe and then tell

of my changes (which are so minimal).

Pumpkin Creme Brulee

I am going to use organic, raw light brown sugar for and for the sugar

to make the carmelized crust, I will use an organic castor sugar. I

am going to reduce each sugar amount by 1 to 2 tablespoons.

Pumpkin Souffle

I am really liking this site -gonna hang onto it for myself. Anyway,

very little sugar here to start. I am unsure of a souffle's

'chemistry' and if I will end up with a fallen souffle if I change

anything. Soooo..... I'm not changing anything here! Except to use

an organic sugar, probably not raw because the added molasses will

probably change things too much.

Individual Pumpkin Souffles

This is from the South Beach diet --but I would rather use an organic

sugar than any sugar substitute type! So that will be the change there.

Ginger Pumpkin Mousse

Another great sounding one. Very little sugar...

Okay, here are 2 other great ones that I am going to have to make

sometime. They sound wonderful and changing the ingredients to

all-organic will be easy enough. I will cut the sugar where I can

(and leave it alone in the souffles!) Lemon Curd is one of my most

favorite things so the 'fail-proof' lemon curd souffle sounds like a

winner!
