For all of you cutting back on sugar, here's a yummy pumpkin pie sweetened with stevia. SINGLE 9-INCH CRUST 1/8 tsp. salt 1 cup whole wheat pastry flour 2 tbls. soy flour 5 tbls. butter, softened 2-3 tbls. cold water. Mix dry ingredients, add butter and sprinkle in water. If still dry, add a few more drops and mix well. Roll the dough as usual. Partially bake the crust at 350 degrees for 15 minutes. Remove from oven and cool. PUMPKIN FILLING 1 tsp. cinnamon 1/2 tsp. ginger 1/4 tsp. nutmeg 1/8 tsp. ground cloves 1/4 tsp. salt 1 tbls. date sugar (optional) 3/4 tsp. powdered stevia extract 2 cups cooked fresh pumpkin or 1 (15-ounce) can plain pumpkin 1/2 tsp. vanilla extract 2 tbls. pure maple syrup (optional) 1 1/2 cups soymilk or milk 2 eggs Mix the spices, salt, date sugar (optional) and stevia extract into the pumpkin in a large bowl. Stir in vanilla, maple syrup (optional) and soymilk or milk. Lightly beat the eggs in a small bowl. Mix well into the pumpkin mixture. Place filling in pie shell. Bake at 350 for 45 to 50 minutes or until a knife inserted at the edge comes out clean. Enjoy!
