Hello everybody,

I am hoping that one of you amazing people can give me a recipe for

cookies using stevia. I did see the one posted when it was the herb

of the week, but my daughter has asked me to find one that is

sugarfree [of course the stevia covers that] and includes raspberries

[or the sf jamjelly version. She had gastric bypass and is doing

great but is sick of the sf things you find on the shelves and I

know some of the ingredients in them are really bad for you. I am

trying to find something that she will eat instead of munching on

goldfish and similar junk all the time . She hates raw veg so there

is no hope of switching her to that!!

I appreciate your help more than you know.

Hi Patricia and all,

 

Here's a recipe for " Jam Dot Cookies " to satisfy your daughters

sweet tooth.

 

1/3 cup oil

1 egg

2 tbls. apple butter

3 tbls plain nonfat yogurt

1 tsp. vanilla

1/2 tsp. powdered Stevia extract

1 1/2 cups whole wheat pastry flour

1/4 tsp. baking soda

1/8 tsp salt

1/2 cup fruit juice or stevia sweetened jam

 

Whip oil and egg together. Mix in apple butter, yogurt, vanilla and

stevia extract. Stir the flour, baking soda and salt together. Mix

the dry ingredients with the wet.

 

Refrigerate for 2 hours. Preheat oven to 325. Form batter into 1-

inch balls and place on buttered cookie sheet. Flatten balls

slightly and make a depression in the center. Spoon jam or filling

of choice into the depression. Bake for 15-20 minutes.

 

This is a yummy " Oatmeal Apple Muffin " -- great for Autumn.

 

1 Cup Whole Wheat Flour

1 Cup Rolled Oats

1/2 tsp. Salt

3 tsp. Baking Powder

1/2 tsp. Nutmeg

2 tsp. Cinnamon

1 1/2 tsp. STEVIA

1 Egg

3/4 Cup Milk

1/4 Cup Oil (or 1/4 Cup Applesauce)

1 Medium Apple Cored and Course Chopped

3/4 Cup Raisins

 

Preheat oven 400 degrees. Mix first seven ingredients thoroughly. In

separate bowl mix remaining ingredients. Gradually mix dry

ingredients into moist ingredients. Spoon into greased muffin tins.

Bake 15 to 20 minutes.
