If we follow our forbearers.... what is usually referred to as Palaeolithic (?sp) they were not farmers, but hunter gatherers...... they ate seasonal foods.... and did not stay in one place to plant and harvest and store grains at all. The early grains that they may have harvested on their travels are nothing like the modified grains that are foisted on humanity today. It seems that many humans have an intolerance to grains and what they contain, and this could possibly be one of the causes of the many diseases rampant right now - through gut damaging etc and poisons entering into and thru the gut wall. IMHO........... Sprouting of any grain changes the way it metabolizes and lessens reaction while still gaining some good nutrition. STILL there are some who are seriously wheat intolerant.... oats too for me.... and I am not celiac according to my biopsy.
