Here is a simple explanation. The calculation for cholesterol is Total Cholesterol = LDL + VLDL +HDL or Total Cholesterol = LDL + triglycerides/5 + HDL HDL, VLDL, and LDL are not fats but proteins. There are the carrier proteins of triglycerides and cholesterol. LDL and VLDL are proteins which bring fats to the cells of the body from the liver. Whereas, HDL is the carrier protein bringing cholesterol products back from the body's cells to the liver. Think of them as Taxi Drivers shuttling their passengers to different parts of the body. When one eats a sugary food, the liver turns the glucose into a storage form for the fatty tissues called triglycerides. Notice the structure of the term TRI-Glycerides --- three fats attached to a sugar . This entails that the fat moieties are connected to a sugar backbone. So in reality, a high triglyercide may be a reflection of high carbohydrate intake NOT fat intakes.
