They reported on the new drink at the 237th National Meeting of the American Chemical Society. The problems I see here are that the final product will be missing essential fiber content, which is also important for diabetics, and that the original vegetables will not be organic and probably will be deficient in minerals. Fermentation can make an inferior food better, but it can never supply missing minerals nor remove all the impurities present in the original product or added in the processing.
