Guest guest Posted January 28, 2010 Report Share Posted January 28, 2010 Hi Holly, I've not heard of anyone with Celiac having a problem because of the Barley in this recipe. The Barley is cooked for a minimum of 6 hours, which has the ability to destroy the enzyme inhibitors in a non-sprouted version. It still doesn't handle the Acid / Alkaline ratio - the pH, but that can be handled by Sprouting or germinating the Barley first which is what we do in the Shillington household when making it. This action also changes the pH over to Alkaline. All grains should be sprouted = soaked overnight before being used. This is one of the beautiful things about Ezekiel Bread. The grains are sprouted before being dried again and turned into flour. Barley and Spelt along with other Heirloom Grains added to Heirloom Beans, might very well be the natural diet of man, but more research needs to be done on this before such an all encompassing statement is made in earnest.
