Mulled Cider Recipe:

Combine Fresh Organic Apple Cider, some Cloves & Cinnamon (Heat

and Spice to Taste)

 

Old Fashion Raisin Oatmeal Cake: Preheat

oven to 400 degrees. When you open the oven to put the cake in, the

temperature will drop and you then set oven to 375 degrees:

 

2 ½ cups Sprouted Spelt Flour

2 cups Rolled Oats

1 cup seedless Raisins soaked in

1 ½ cups Organic Apple Juice

1 cup Sucanat

½ cup Safflower oil + 1 Tablespoon

½ cup grated Carrot

2 ½ tspns. Baking Powder

2 tspns. Pumpkin Spice

1 tspn. Vanilla

½ tspn. Salt

 

Put the Raisins in a medium bowl and pour 1 ½ cups of Apple Juice over

them and let them sit 10 minutes or more to moisten and plump them up a

bit. While the Raisins are soaking, measure and put the following dry

ingredients in a bowl: the Sprouted Spelt Flour, Rolled Oats, Baking

Powder, Pumpkin Spice and Salt. Mix well with a wire whisk. Grease

the sides and bottom of a 9 inch deep dish pie plate with 1 Tablespoon

Safflower oil. Now that the Raisins have soaked about 10 minutes, add

the Sucanat, Vanilla, Carrots and Safflower oil to the Raisins and

juice and stir well. If the oven has been preheating for at least 10

minutes, pour the dry ingredients into the wet ingredients. Stir

quickly and well until you don’t see any flour – about 30 seconds or

so. As soon as there is no flour in sight, pour the batter into the

pie plate and even it out. Pop into an oven set at 375 degrees and

bake for 35 minutes. Test with a tooth pick. Cake is done when the

tooth pick comes out clean. Let cool and cut in half, then cut the

half in half and each quarter in half again. You will end up with 8

nice sized, pie shaped pieces.
