Rubbing it just before adding to a recipe keeps the strength in the leaves; once it is broken up it loses it strength over time. Keeping an herb in natural form helps it retain it's properties, this includes keeping it in airtight, dark containers away from heat. If you do not want to dry them you can preserve them in olive oil or vinegar.
