someone wanted this posted again . sorry it took me so long

 

 

 

 

pickled Garlic

 

If you eat this with your eyes closed you will never guess what this is.

 

1/2 lb garlic cloves

1 large red pepper, seeded and slivered

2 cups vinegar (5%)

2/3 cup sugar

1/2 tsp mustard seed

1/2 tsp celery seed

 

Peel garlic. Leave small cloves whole. Cut large cloves in half. Combine

with red pepper.

 

Measure vinegar and sugar into a saucepan. Place mustard seed and celery

seed into cotton bag and tie. Add to saucepan. Heat on medium high,

stirring frequently, until it boils. Boil 5 minutes. Add garlic and

pepper mixture and return to a boil. Boil 5 minutes. Discard spice bag.

 

Ladle garlic and pepper mixture into jars with a slotted spoon leaving a

1 " headspace. Fill with hot brine to within 1/4 " headspace. Check for

sir bubbles and add more brine if needed to adjust back to 1/4 "

headspace. Process in a boiling water bath for 10 minutes. Adjust time

according to altitude.

 

Makes: 2 half pints
