I am still eating mine, harvested last July, and it is perfect. Much depends on how it is cured. If garlic is left unharvested and untended, it will turn into something resembling garlic grass. Each bulb will divide into small plants, right? I have had this happen in an abandoned garden. If you plant extra garlic they are delicious eaten as you would a leek, first thing in spring.
