I'm going to get some seeds and grow some Amaranth this year.

Amaranth is easy to grow, and the thinnings make good

greens. You may already have eaten it as "red-rooted

pigweed", the weedy form. In the same way, the well-known

lamb's quarters are almost identical to young Quinoa.

Even up here on my poor rocky soil both grew nicely.

The trouble with both Quinoa and Amaranth is not

the growing but the processing. I have not yet figured

out an easy way to separate the grain from the chaff.

If anyone knows more about that, please share!

Both these and other ancient grains can be bought

from Dan Jason's wonderful Salt Spring Seeds.

They are grown mostly on Salt Spring Island between

Vancouver Island and the mainland.

Dan's books are worth the money too. Great guy!
