Does anyone know what oils are good to cook with

Glenda - my suggestion is to look at science and documented reference

on coconut oil. Because of it being a type of saturated fat some

regarded as not beneficial. However it is important to look at its

structure and its " behavior " during exposure to high heat and then

the effects it has on our body. I think Doc used to offer books on

coconut oil, but if he does not anymore email me at

daniela and I will email you a short list of

references where you can start from.

 

One note on olive oil, though is that after reading references on it,

I do not believe it is the best choice for cooking at high

temperatures (especially frying) because of its " behavior " at high

temperatures. Because of its tremendous properties it is one of my

top choices for use on raw foods or for use on steamed foods just

before serving.

 

Very good resource on this topic to start from is Sally

Fallon's " Oiling of America " (you should be able to find videos on

you tube as well).

Almond oil is perfect for high temp cooking and all sorts of other

things. light flavor, not overpowering.... I use it in my massage

practice also!

 

You can purchase this at Whole Foods.

I belong to a place called Kerala, India, kera means cocanut. Cocanut oil is used extensively for cooking, body massage and oil bath (Apply cocanut oil on the head, wait for half an hour and take bath). If you want a cooking oil that is not affected by heating, Rice Bran Oil is good. In Japan, Korea etc. rice bran oil is used extensively.
