Hi Kath,

 

If you are in the San Francisco Bay area some time, Dr. Nam Singh has classes

nearly every single week in his San Francisco home on Wednesday and Thursday

evenings. The South Star Cooking Academy is what Nam calls his school. He also

teaches in London every year. See:

Nam's classes in his home begin with lecture, observing " da qi " , then cooking in

his kitchen the menu for that evening, and then sitting in his dining room

eating the meal that everyone has prepared. I've taken years of classes there,

and there's been no repeats. It's always fun and uplifting.

 

Liu Ming teaches " Nourishing Within " classes on various Saturdays. He is in

Oakland CA on Telegraph Street in a nice big loft where it's easy to hold

classes.

 

My notebook is many inches thick with recipes and notes from Nam Singh's

classes, but it's really about the " moment " and the da qi. So all of those

pages represent those moments. I would not pass on anything that Nam handed

out. Those are his representations. I'll let him do the presenting. I've

suggested to various people in your area, Kath, to have Nam do a class at Golden

Needle or at Cissy M.'s Chinese Acupuncture Clinic. No takers yet. Let me know

if you have some ideas.

interesting in seeing some of the formulas and recipes you describe. are

they available on the web or in print? could you point me to some sources?

I didn't know that Nam Singh was still teaching cooking classes. Do

you have any contact info for the Bay Area classes? The link was for

the school in New York and London.

 

I'm familiar with Charles Belyea's teaching, since he taught smester-

long classes in nutrition and Chinese history when I was in

acupuncture school 20 years ago. I'm surprised to hear that he is

teaching so many vegetarian recipes, as that wasn't the case whan I

took his classes back then.
