i think you may be onto something with the gluten issue. are oats high in

gluten? that's another damp grain. i know millet and rice are low in

gluten, which is why they are difficult to bake with, producing dry, heavy

breads.

Oats are one of the higher gluten foods that people with celiac are to avoid.
