I am seeking a recipe for fudge

made with NO DAIRY and NO SOY

I have allergy to soy gluten and casein.

 

Can anyone tell me if they have made fudge using coconut milk/cream

was it successful?

Please send your replies to the list we would ALL like to know - oh and no SUGAR either - eh Clare?? Fudge is mainly SUGAR. Americans are so good at sugary things we should get a good recipe here! And I will check my coconut recipe book too

I, too, am allergic to soy and dairy. I also cannot have corn or wheat. I haven't made fudge in years, and not since my allergies. I found this recipe on allrecipies.com and after looking at the ingredients, there are some subsitiutions that you can do. You may be able to use agave nectar, raw sugar or maybe rice syrup in place of white sugar. I use almond or rice milk. I do use organic unsalted butter, but might be able to use ghee. Also, organic dark chocolate or carob, or use a nut butter instead. I don't use marshmallows (fudge is sweet enough without it) and don't see a need for it in fudge, unless you want them. I'm always taking recipies and converting them to my dietary needs. I'll try this tomorrow and see if it'll turn out.

2 cups white sugar 1 cup milk 1 teaspoon vanilla extract 1 cup butter 25 marshmallows, quartered 2 cups milk chocolate chips 2 cups semi-sweet chocolate chips 2 (1 ounce) squares unsweetened chocolate 1 cup chopped pecans

 

DIRECTIONS

 

Grease 1 - 11x16 inch jelly roll pan. Set aside.

Combine sugar, milk, vanilla and butter in large, heavy saucepan. Bring to a boil, stirring occasionally. Boil for 2 minutes.

Remove from heat and add marshmallows, semi-sweet chocolate chips, milk chocolate chips and unsweetened chocolate. Stir until melted and smooth. Stir in nuts. Mix well.

Pour into prepared pans. Let fudge sit at least 24 hours before cutting into squares. Refrigerate for easier cutting.

Hey Clare

 

I have a product here called Raw Coconut Chocolate Butter that is the consistency of fudge which I bought to try - you can melt it and pour over whatever OR you could melt it into a baking tin and then cut into squares - as a chocolate fudge substitute it would do fine. In the jar it is SOLID. hard in cold weather .....

 

The ingredients are

 

Organic Raw Coconut oil

Organic raw cacao powder

Organic Agave syrup

Himalayan crystal salt

 

One could say it was quite divine lol and you could make your own I'm just not sure about the proportions of how you can blend syrups, powders and oils to make such a lovely texture (a bit like making chocolate crackles I suppose) but if I was recreating it I would add vanilla, this always softens the quality and flavour of chocolate.

 

I'm getting this for Christmas presents this year for my friends - you'd better say now if you want to be added to the list!!
