Turn speed of blender to whip or cream (one that is lower) and slowly add 1 cup of extra-virgin olive oil. Mix for a few minutes and viola! You can store in the fridge in a plastic container. Now, I don't drink the stuff but my neighbors do and they asked me to pick some up. Maybe I shouldn't complain about those prices because I don't buy, let alone drink the stuff, but all food prices and other products are going up, up, up. It is quite discouraging.
