Kimchi was candida

Bea may I have your kimchi recipe and directions please - when you have time - it seems a very complicated thing to make?

 

I agree that hypertension is more likely to be the lack of one of the other minerals rather than a high salt content - especially the quality salt - more likely to be a lack of Magnesium or Potassium

I make kimchi that i use near daily---would this be a good source of probiotics? And also have been wondering about the salt content (high quality sea salt)--as I have high BP. Have heard that good salt is not the culprit it used to be in thinking of high BP.

It's actually very easy---well the kind I make anyway---essentially the process entails cabbage either oriental or regular--sprinkle with sea salt to soften for a few hours then rinse--and add chinese radish--green onions--zuchinni--garlic and ginger--hot pepper--(you can add many different ingredients) add salt water brine some add a bit of sugar (I don't like mine too salty--though not sure what effect that has on fermenting) and leave in a room temperature for about three days--or more depending on how strong you want it. The stronger the more good bacteria I presume. Anyway it winds up pretty stinky--but so good for you. It will keep in the fridge for months. The REAL Kimchi makers use anchovies or shrimp and roll it all up fancy and use ceramic crocks--but for me the important thing is the bacteria. You can't really go wrong. It's actually very easy---well the kind I make anyway---essentially the process entails cabbage either oriental or regular--sprinkle with sea salt to soften for a few hours then rinse--and add chinese radish--green onions--zuchinni--garlic and ginger--hot pepper--(you can add many different ingredients) add salt water brine some add a bit of sugar (I don't like mine too salty--though not sure what effect that has on fermenting) and leave in a room temperature for about three days--or more depending on how strong you want it. The stronger the more good bacteria I presume. Anyway it winds up pretty stinky--but so good for you. It will keep in the fridge for months.

The REAL Kimchi makers use anchovies or shrimp and roll it all up fancy and use ceramic crocks--but for me the important thing is the bacteria. You can't really go wrong.
