The skin cell of onion has 2 layers. One part contains the allinases enzyme, and the other contains sulfide enzyme. When we are mincing the onion, the cell brokes so both of the enzymes go out and are splashed out to the air. The allinases enzyme decomposites the sulfide enzyme to sulfonat acid. This acid is not stable so that it metamorphs to amino sulfokside gas. This gas hits the eyes and reacts with the liquid at retina and it produces soft sulfur acid. This soft sulfur acid irritates the nerve at retina.
