Guest guest Posted December 1, 2006 Report Share Posted December 1, 2006 Apple-Cinnamon Scones Our Rabbit Hole customers are split down the middle on which Scone/Cake is the best We didn’t think we could improve on this one but about half of our customers prefer the Old Fashioned Oatmeal, Apple, Raisin Cake. So you’ll have to try both and decide for yourself. Put all these ingredients in a large bowl: 2 cups sprouted Spelt flour 2 ½ teaspoons Baking Powder without/no Aluminum 2 teaspoons Cinnamon ¼ teaspoon sun dried sea Salt Mix with a metal whisk and set aside. Preheat oven to 400 degrees. Put oven on “BAKE”. Set timer for 30 minutes. Put the following in a blender: Makes Date Syrup 5 oz. of pitted dates cut in half (about 8 large Medjool dates) 1 cup organic Apple Juice ½ cup Safflower oil 1 teaspoon Vanilla Put lid on blender and blend for about 2 minutes to make a date syrup. Grease a 9 inch diameter deep dish pie plate with Safflower oil. Wash, core and dice 1 ½ cups of Apple and put in a large bowl. Do not peel. Pour the date syrup from the blender over the Apples. Use a spatula or knife to get all the syrup out of the blender. Stir. Note: Once wet ingredients are added, baking powder starts to work and it is important to get the scones in the oven as quickly as possible. Add the dry ingredients to the wet ones. Stir until you do not see any dry flour. Spoon 6 scones into the pie plate arranging them so they look like 6 equal pieces of pie. If necessary, quickly take some dough from the larger ones and put it on the smaller ones so that all look about the same size. Pop them into the oven, set timer for 22 - 25 minutes and again check to be sure oven is on “BAKE” and temperature is set at 400 degrees. Set a timer and bake in the center of the oven for 22-25 minutes.
