Scrub them and chop or dice whatever you want Freeze them or you can preserve with vinegar or alcohol. Usually I use them right away either in medicines or in a sauce- I dislike ketchup and mustard, but I love horsey sauce. Or just plain grated horseradish can be good in some situations.
