Hi Karen,

 

Lucky you! Going on a cruise <grinz>

 

Tahitian vanilla beans (Vanilla tahitensis) are a different variety than

" Bourbon " beans (Vanilla planifolia) . They are fatter and moister than

Vanilla planifolia beans (so its easy to tell them apart), they contain

less vanillin, but have a floral sweetness to them. They are different

but quite nice :) Definitely get some while you're there!

 

I was also going to offer Tahitian beans in the co-op, but didn't get

all the samples I wanted for those in time, so I am going to hold off on

them for now.

A question of curiosity... I'm going on a vacation (cruise) to Tahiti

next

week, and I noticed that a couple of the shore excursions have tours of

vanilla bean plantations.

 

How do Tahitian vanilla beans compare to anybody else's beans? Would

they

be worth buying (and could I even bring them back into the US?)

 

Just wondering...

Aw, man, ya beat me to it!! I was about to post the same thing to the

list--I'm so glad I got as much as I did! I could wish I'd gotten

more but...oh, well, I DO wish I had!

Great question! I didn't even think of that. Can we freeze them or

should they be used immediately?

Hey folks,

 

In theory, vanilla beans can be kept indefinitely. They should have no

problem keeping until you see your daughter in April (and far beyond

that too)

 

I wouldn't freeze or even refrigerate those beans! Refrigeration can

cause them to harden and crystallize. When beans get hard and dry they

lost some of their flavor. The moistness they are at now is quite

perfect :)

 

But excess humidity can cause them to mildew. I store my Vanilla beans

in an airtight container, like a covered mason jar, in a cool, dry

cupboard. If you have one of those vacuum sealers you can use that too.

 

Over time, the natural vanillin in Bourbon beans may develop a crystal

frost. The crystals are edible. The crystals definitely look different

than mildew, which is not edible.

Is anyone familiar with the medicinal uses of vanilla beans and how they are prepared?

 

I managed to get a lot of them(Organic Madagascar Bourbon vanilla) from ebay- they have just arrived and my first extract(culinary) is in the jar. but now Im hearing things about its

medicine value and was just curious what any of you have done with it.
