Samantha ****************************************************** This is a medium loaf. Stir together in a bowl. 1 c brown rice flour 1 c tapioca flour (starch) 1 c arrowroot flour 1 tbsp potato flour (not starch) 2 1/4 tsp xanthan gum 1 1/2 tsp unflavoured gelatin 1 1/2 tsp egg replacer 1 tsp salt 2 tbsp sugar 1/3 c instant soya milk powder 2 1/4 tsp dry yeast granules ( always last- dig a hole in the flour) Wet Ingredients (place first in breadmaker) 3 eggs 1/4 c olive oil 3/4 tsp vinegar or dough enhancer (I use vinegar) 1 1/3 c water plus 1-2 tbsp usually The batter will resemble banana loaf batter- it will never form a ball like whole wheat loaves do. Whole wheat setting, light crust My bread maker takes 3hr and 40 min VARIATION: The ongoing saga of my experiments in GF/rice free bread. Today I tried millet *flour* for that 2 cups of flour. The variation listed is not for the recipe listed, but for the following recipe (this one is gluten and rice free). Sorry for any confusion!
