Doc,

This is my last post for the day... I think;-)

I have ousted the coffee, per your suggestion. Dairy is down to

cooking with a smaill amount of butter occasionally, one raw organic

egg in the AM, and cheese is out enough that I don't crave it anymore

- which means that it's probably " out " , too.

As I mentioned in an earlier email. I'm mostly vegetarian. I consume

as much organic as I can get my hands on, and so on. I eat a light

breakfast, and decent lunch, and light supper. with fruit and wheat

crackers in between. And LOTS of water, organic herbal teas, and

almond milk.

The problem is that in the middle of the afternoon I get HUNGRY. Not

just a little hungry - We're talking about eatin the horse and chasing

the rider, as my mom used to say. My first line of defense is to drink

more water. All this does is make me pee (which is good.), but I'm

still left feeling hungry? What gives? Is this my body throwing a

tantrum to the majority of dairy being taken out of my diet?

I want to try oat milk to see if that will help with the hunger. I

tried it in coffee a while back (when I drank coffee), and I must say

that it was the most filling cup of java that I'd ever had, LOL! I

would not reccomend it, though - It tastes *really* wierd. Problem is

I don't know how to make oat milk that doesn't feel like cold slimy

oatmeal. Can you or someone else on the list tell me how to do this?

Any other suggestions, or experiences would be much appreciated.

Dear Tammi,

For that afternoon hunger attack, I'd recommend Almond Milk. You want to sprout your almonds first before you make it into the "milk", but this will assuage your ravenousness. ;-)

Ok Doc!

I've scoured the website and find no instructions nor formula for

making almond 'milk'.

I personally eat a handful of nuts daily for their antioxident

capabilities. I love sprouted almonds as their taste is awesome and

brings back memories of childhood California tastes when we harvested

our own almonds (along with other fruits, nuts, and vegetables).

Almond milk is easy as punch to make.1 cup raw sprouted almonds - 1 1/2 if you want almond " cream " 4-6 cups distilled water, heated just til boiling seems to work best - For almond " cream " use 3 1/2 - 4 cups.

Some people like to use dates sweeten, but I like mine unsweetened so I can cook with it.Add almonds and pulse in blender until they look " crumbly " - Then add 1 cup of the water and pulse a bit more. Add another cup, and pulse some more. Add the rest of the water and blend on the highest setting for about 2 minutes. Let it rest for five or so, blend for 2-3 more minutes. Take 2 pitchers. Strain " milk " into one and let it set. Strain and let set again. Do this until most of the pulp has been strained out - you won't be able to get all of it, so just pour slowly if you don't want it. Note: Almond " cream " is made the same way. It has the same consistency has whole milk. For some reason the almond " cream " pulp takes less time to strain out. One or two passes through a strainer and it's done.

Save the pulp: it can be made into a mild almond paste, added to smoothies, and it makes a great facial. I've heard you can dehydrate it and run it through a food processor to make your own almond flour.(Doc, Should I leave the skin on or off? - I prefer off for cooking purposes, but was wondering if the skin had something " xtra " .). - I also confess that I do not always sprout them and just soak them overnight.

I forgot to add to let the water rest for about 10 minutes after. I don't know what temp it is, but it's hot, but not warm.Tammi U.On 7/19/06, Tammi U.
