Getting ready to make this in the morning...After you peel the

potatoes..what can you do with the potatoes if you can't use them

right away...anything? Can you freeze them and if so how would you do

that?

I know mashed potatoes freeze pretty well... I imagine you could cook

them just about any way to freeze them... we like to make wedges out

of them and bake them with light olive oil, sun dried tomatoes and

garlic... they freeze ok this way too, if we only bake them for about

1/2 the time; A soup is good too... what's your favorite potato dish? :)

Due to the water content, raw potatoes do not freeze well. You could cut them in wedges, slices, or whatever shape you want, and toss them in olive oil and bake them until they are 1/2 to 3/4 done, and then freeze them. Voila! You've just made your own frozen french " fries " , without all the " junk " that store fries have! Add salt, pepper and spices to taste when you get ready to bake them in a 425-450 degree oven for about 15-20 minutes.
