Dear Rajan,

This means to cut the Garlic along the lines of and in the same direction as the skin is going as apposed to a cut across the grain. You want to cut it end to end rather than in half which gives you a cross section.

I understand there may be a language difficulty here, and I hope I've explained it to your satisfaction.

;-)

All the best,

Doc

Can I ask why it should be cut this way, rather than minced?

Nothing wrong with minced at all. This would be fine.

You just don't want to swallow it whole. If you cut against the grain, there's a chance the clove may not get absorbed and pass through the body without being digested. People who take their cloves whole often see the entire clove come out in their stool due to the toughness of the skin of the Garlic. The whole point is to make it easier for the clove to fall apart when inside the stomach for easier absorption.

Hope this explains it better.

Garlic Cloves: I have put them in a juicer when making carrot juice and it is quite strong.
