If I had to choose one organ that I would devote all my love to, it would be my liver. It is the gateway to your blood and works very hard night and day to eliminate toxins. Chinese medicine practitioners have been sharing this knowledge for literally hundreds of years and it's high time we treated our liver like the temple it is. If you live in a polluted city, eat processed foods, drink alcohol, smoke, use non-organic/natural body care products, have stress in your life, use chemicals in your home or if you just want to give your liver some more love, then this salad is for you. Liver Lover Salad - 5 minutes is all it takes to make! 2 apples chopped 2 cups of raw beets grated 2-3 medium sized carrots grated 1/2 cup almonds (soaked in water overnight - see reasons below) 1 tbsp of extra virgin olive oil 1 tbsp of freshly squeezed lemon Sea salt & pepper to taste Mix all together in a large bowl. Soaking nuts is extremely important to increase their digestibility. Any nuts with a brown skin such as an almond, walnut, hazelnut and pecan need to be soaked overnight because of enzyme inhibitors that prevent your body from properly digesting the nut. Why has nature given nuts this protection in the form of a brown skin? It keeps the nut dormant until it's planted in the ground and surrounded by moisture; this is when the nut can come to life and grow. It's also why when you soak nuts, they become " superfoods, " because they think they are becoming a tree! The nutrients flourish, the protein content actually increases and the nut becomes a living food because it is bursting with enzymes. Another reason to soak nuts is that they tend to be very acidic when they are dry. When you soak them they become more alkaline because they are now a " living food " . This is very health-promoting because the Standard American Diet (SAD) is very high in acid-forming foods such as dairy, sugar and red meat.
