He has the best success keeping his blood sugar levels even by eating whole grains, fruits and veggies. Despite being on a insulin pump, his sugars typically go too high or low as he likes junk food. Several times we have done a " Daniel fast " with our church in which no sugar, meat or processed foods are eaten. His sugars are always phenomenal and I so wish he would always eat this way. I doubt a healthful meat would cause a blood sugar spike. I think the culprit is the processed white flour and sugar products he likes. So, even though his pancreas makes no insulin, it is amazing how good he does on a real food diet. He still has to take insulin, but does not get the highs and lows that are typical for him. I'm sorry to hear that about your son. Diabetes is horrible. I think sometimes a vaccine can trigger it. Thankfully, a healthy diet will go a long way in helping your son stay healthy.
